Foxtail millet aids in the management of blood sugar elevations, improves immunity, is an excellent substitute for rice, provides early satiety, and is high in vitamin B12, which is essential for cardiac health.
Foxtail Burfy
Ingredients
Foxtail Millet - 250 grams
Jaggery -150grams
Ghee
Dry fruits powder (almonds + cashews + pista)- 3 tablespoons
Almonds & cashews -4-5 each for bites
Direction
Soak the 250 grams of foxtail millet overnight.
Wash it completely and thoroughly.
Add 2 teaspoons of ghee to the pan and roast the foxtail for 10 minutes.
Add water to it and boil it till the millet absorb it completely.
Add 150 grams of jaggery to the boiled mixture.
Make it into a semisolid consistency (as halwa)
Add dry fruit powder to it ( badam, pista, cashew) and mix.
Grease the plate with ghee/oil / put butter paper.
Transfer it to a plate for mold and top it with small bites of almonds and cashew.
As soon as it gets cold cut them into the required shapes.
